A great dessert for your next 4th of July celebration: The Stars and Stripes Blueberry and Strawberry Pie.
Quick and easy enough if you use store-bought pie dough or puff pastry. But of course you can also use your favorite pie dough recipe.
The inspiration I originally found on this website, but you can find many variations of those on the web. I just wonder why most people are making a round pie when the flag is actually a square… 🙂
Then I went and made up my own recipe. Serves 4.
Butter a 29×23 cm baking tin. Then cover it with the dough and make a border. They don’t sell ready-made pie dough around here so I went with puff pastry. Works just as well and tastes delicious.
A little tip for working with puff pastry/pie dough: while you’re not working on it directly, put in the fridge.
For the Blueberry Filling
Most people on the web just make the part under the stars with blueberry filling. But as I wanted to use up all the blueberries that I had, I filled half the cake with it. A little artistic liberty. 😉
- 2 1/2 cups fresh blueberries
- 2 tbsp cornstarch
- 1/2 cup sugar
- a pinch of cinnamon
- a pinch of nutmeg
Stir ingredients together in a bowl and fill in the left half of the pie.
And back into the fridge!
For the Strawberry Filling
- 3 cups fresh strawberries (cut and prepared)
- 1/4 cup sugar
- 2 tbsp cornstarch
Again, mix ingredients in a bowl and fill the right half of the pie.
If you’re wondering what the cornstarch is for: fruits contain a lot of water which they give up while baking, but puff pastry/pie dough don’t particularly like to get too wet. So the cornstarch is there to absorb as much of the water as possible.
Stars and Stripes
Using some leftover dough, cut out some stripes and make a few stars with a cookie cutter. Place over the pie.
Put in the fridge for about 30 minutes before baking. Bake in a preheated oven at about 180°C for 35-40 minutes until it is nicely golden.
Et voilà! A beautiful and tasty Stars and Stripes pie!
